Recipe Sweet Festive Orange Butter Pudding With Raisins

INGREDIENTS

  • 5 oz of butter
  • ½ cup of sugar (3.5 oz)
  • 4 eggs
  • 2 cups of flour (8.5 oz)
  • 1/2 cup of corn starch
  • 3 tbsp of baking powder
  • 1 tbsp of salt
  • Grated rind of half a lemon
  • Grated orange rind
  • ½ cup of orange juice (125 ml)
  • ½ cup of blond raisins (2 oz)
  • ½ cup of raisins (2 oz)

Icing

  • ½ cup of icing sugar
  • Orange juice

PREPARATION
Place the eggs in a bowl and whisk them a little.

Churn the butter along with the sugar until forming a cream, add the semi-whisked eggs gradually.

Add the lemon and orange rind.

Sift the flour, corn starch, salt and baking powder and add it to the previous preparation alternating with the orange juice.

Add the previously dusted raisins and mix until incorporated.

Pour in an English pudding mold, greased and dusted.

Take to a moderate oven for 60 minutes.
Once cooked, wait for a few minutes before demolding over a rack.

Prepare the icing adding the orange juice gradually, mixing until forming a cream that can be spread without being too liquid so it is not absorbed by the pudding.
